Buffalo Ranch Potato Gems Recipe

Place mayonnaise, sour cream, pickle juice, buffalo sauce, garlic powder, onion powder, chives, and dill in a medium bowl. Whisk to combine the dressing and season to taste with salt and pepper. Transfer the dressing to a sealable container and refrigerate until ready to use.

Preheat the oven to 200°C.

Place cooked potato gems in a large bowl. Drizzle the gems with buffalo sauce and toss to coat. Transfer the seasoned potato gems to a large ovenproof pan or baking tray.

Sprinkle the potato gems with blue cheese crumbles and place them in the oven. Bake for 10–12 minutes or until the blue cheese has melted.

Remove from the oven and top the gems with bacon, spring onions, and red chillies. Drizzle with buffalo ranch dressing before serving (serve any extra dressing on the side for dipping).
