Skillet Mac & Cheese Recipe

This legendary mac and cheese recipe is the ultimate in classy comfort food. Pasta shells are tossed together with a super creamy cheese sauce, made using a combination of gruyere and sharp cheddar. We upped the classy quotient by adding our truffle-infused oil to the cheese sauce, imparting some seriously delicious earthy flavour. The final pièce de résistance is a crunchy, buttery ritz cracker topping.

Instructions:
  1. Preheat the oven to 190°C. 
  2. In a large pot, bring water to a boil add a pinch of salt, add pasta shells and cook until andante, set aside.
  3. Melt butter in a large saucepan over medium heat. Once the butter has melted, add TRUFF oil, garlic, and shallots, sauté until veggies are fragrant, about 1 minute. 
  4.  Stir in flour, creating a roux (mixture), and cook for another minute. Add milk to the saucepan and whisk to combine. Bring milk to a low simmer, whisking frequently, until slightly thickened. 
  5. Add cheeses to the milk, a handful at a time, whisking to combine, and waiting until the cheese has melted before adding the next handful. Season cheese sauce with salt and pepper. 
  6. Place cooked pasta shells in a large bowl and add cheese sauce, stir to combine. Transfer mac and cheese to a large oven-proof skillet, spreading out in an even layer, and set aside. 
  7. In a medium bowl, place ritz cracker crumbs, melted butter, and parsley, stir until combined and crumbly. Sprinkle bread crumbs over the top of the mac and cheese and place in the oven. 
  8. Bake for 35-45 minutes or until mac and cheese is bubbly and cracker topping is golden brown. Remove from the oven and let rest for 5 minutes before serving.
