125ml whole milk

Spinach Frittata with Bacon, Cheddar & White Truffle Oil

Instructions:

 

  1. Preheat the oven to 200°C. Heat a large, oven-proof frying pan over medium-high heat. Once hot, add the bacon (working in batches if necessary), drizzle with truffle oil, and cook until crisp, about 5 minutes.

  2. Once cooked, remove from the pan and set aside to drain on paper towels (leave any drippings in the pan). Once drained, cut the bacon into bite-sized pieces.

  3. Add the onion and garlic to the pan, stir to combine, and sauté for 1 minute. Add the spinach to the pan (working in batches if necessary) and cook until wilted, about 2-3 minutes. Remove the pan from the heat.

  4. In a large bowl, whisk together the eggs, milk, cheddar, salt, and pepper. Pour the egg mixture into the pan, add the bacon, and gently stir to combine.

  5. Place the pan in the oven and bake for 20-30 minutes, uncovered, or until firm and cooked through. Remove from the oven and let cool briefly before slicing and serving.
