INGREDIENTS

1 tablespoon beef bouillon 

1 cup hot water 


BBQ Sauce: 

1 tablespoon butter 

1 cup yellow onion, peeled and diced 

1 ½ cups TRUFF Black Truffle Pasta Sauce 

3 tablespoons apple cider vinegar 

2 tablespoons Worcestershire sauce 

2 tablespoons brown sugar 

1 tablespoon Dijon mustard 

1 teaspoon smoked paprika 


Brisket: 

2kg raw beef brisket  

1 ½ tablespoons salt 

1 tablespoon black pepper 

1 tablespoon garlic powder 

1 tablespoon onion powder

TRUFF BBQ Brisket Recipe

If you’re a brisket fan then you’re going to love this recipe. No smoker? No problem! This savoury TRUFF BBQ Brisket recipe uses the grill and the oven to achieve that tell-tale tenderness and savoury smokiness. But! The true secret is in the sauce.
We crafted a sweet and savoury BBQ sauce using our Black Truffle Pasta Sauce.

 

A creative blend of ingredients, slowly simmered together to extract as much flavour as possible (yellow onions, apple cider vinegar, Worcestershire sauce, brown sugar, Dijon mustard, and our TRUFF Black Truffle Pasta Sauce), makes for a surprisingly delicious sauce perfect for grilling and slow cooking. We love serving our BBQ Brisket with buttered white bread, pickles, and oodles of sweet-iced tea.
 

Instructions:

  1. Melt butter in a medium saucepan over medium heat. Once melted, add the onion, and sauté for 5 minutes or until soft. Add the black truffle pasta sauce, vinegar, Worcestershire sauce, brown sugar, mustard, and smoked paprika, stir to combine, and bring to a simmer. Once simmering, reduce heat to low, and cook, stirring occasionally, for 5 minutes. Set aside to cool for 10 minutes.
  2. Meanwhile, pat the brisket dry with paper towels, and trim any areas with excess fat (you want a thin layer of fat on the top of the brisket). Season, all over, with salt, pepper, garlic powder, and onion powder, using your hands to rub in the seasoning.
  3. Preheat a gas grill to medium-high heat or prep charcoals for a charcoal grill. Once the grill is hot, place the seasoned brisket, fat-side down, on the grill grates. Grill the brisket for 5-8 mins per side or until grill marks form, and light charring occurs around the edges. Remove from the grill and transfer to a roasting pan.
  4. Preheat the oven to 180°C. Place the cooled BBQ sauce in a blender and blend until smooth. Coat or brush the brisket with half of the BBQ sauce. Add the hot water and bouillon to the remaining BBQ sauce, return to the blender, and pulse until combined. Pour that mixture into the bottom of the roasting pan.
  5. Cover the roasting pan with aluminium foiland place in the oven. Roast for 2 ½ to 3 hours or until the brisket is tender. Remove from the oven and set aside to rest for 15 minutes before slicing and serving. We love serving our BBQ Brisket with buttered white bread, pickles,and oodles of sweet iced tea.
