Vegan Potato Breakfast Hash Recipe
This vegan-friendly potato hash recipe is chock full of veggies and flavour. Vegan sausage crumbles are seared and seasoned with TRUFF’s Original Hot Sauce.
By seasoning the breakfast sausage with the OG, we’re able to infuse the entire dish with delicious heat and awesome black truffle flavour.
Joining our sausage is a classic combination of gold potatoes, sweet potatoes, onions, garlic, capsicum and kale. The potatoes are nicely browned before being sautéed with the other veggie full ingredients, adding that coveted tender crunch we all love from a homemade hash.
Instructions:
- Heat 1 1/2 tablespoons of oil in a large pan over medium-high heat. Once the oil is hot, crumble the vegan sausage into the pan and sear for 2-3 minutes.
- Add the hot sauce, stir to combine with the sausage, and continue to cook until the sausage is hot throughout and nicely seared. Using a spoon, remove the sausage from the pan, and set aside on a paper towel lined plate.
- Return the pan to the heat and add the remaining 1 1/2 tablespoons of oil. Once hot, add the potatoes to the pan, spreading out in an even layer.
- Cook, undisturbed, for 3 minutes or until the potatoes have begun to lightly brown. Flip the potatoes (as best as possible) and continue to cook for 2 minutes before adding the onions, garlic, capsicum, and kale. Stir the veggies together and sauté for 5 minutes or until the veggies are tender and the kale has wilted.
- Return the seasoned sausage to the pan and stir to combine with the veggies, continuing to cook and allowing the sausage to reheat (about 1 minute more). Season to taste with salt and pepper before serving.
