1 avocado, peeled and chopped

½ cup blue cheese dressing

2 tablespoons fresh coriander, chopped

1 tablespoon lime juice

Salt and pepper, to taste


Buffalo Prawns

2 tablespoons butter

2 garlic cloves, peeled and minced

500g large raw prawns, peeled and chopped into bite-sized pieces

¼ cup TRUFF Buffalo Sauce


To Assemble

8 corn tortillas, warmed

1 cup green cabbage, shredded

½ cup purple cabbage, shredded

½ cup celery, shredded

½ cup carrot, peeled and shredded

¼ cup radish, shredded

¼ cup fresh coriander, chopped

Lime wedges, for garnish

Buffalo Prawn Tacos Recipe

We could eat these prawn tacos for days! The combo of garlicky, TRUFF Buffalo Sauce-coated prawns, creamy avocado blue cheese dressing, and crisp fresh veg creates the perfect storm of flavour.

To take these tacos to the next level, we’ve used TRUFF Buffalo Sauce (bye-bye boring buffalo—this TRUFFalo kicks serious butt!). With black truffles, cayenne chillies, and vinegar, it adds tang and sizzle in all the right places. It might sound like an unusual combo, but trust us—this truffle-spiked buffalo sauce works. A new taco fave you have to try.

Instructions:
  1. Make the dressing: Place avocado, blue cheese dressing, coriander, and lime juice in a food processor. Blend until smooth, then season with salt and pepper to taste. Transfer to a sealed container and refrigerate until ready to serve.

     

  2. Cook the prawns: Melt butter in a large frying pan over medium heat. Once hot, add the garlic and sauté for 1 minute. Add the prawns and TRUFF Buffalo Sauce, stir to combine, and cook for 5–6 minutes, or until the prawns are cooked through. Remove from heat.

     

  3. Assemble the tacos: Divide the cabbage, celery, carrot, and radish between the warm tortillas. Top with buffalo prawns, a drizzle of avocado blue cheese dressing, and a sprinkle of coriander. Serve with lime wedges on the side.
