Mediterranean White Fish

2 tablespoons olive oil

2 garlic cloves, peeled and minced

½ cup yellow onion, peeled and sliced

1 cup red capsicum, sliced

1 cup yellow capsicum, sliced

1 cup orange capsicum, sliced

1 can diced tomatoes

⅓ cup pitted green olives

⅓ cup pitted black or kalamata olives

Pinch of saffron

4 cod fillets

½ teaspoon salt

¼ teaspoon black pepper

Mediterranean Fish Recipe

The perfect recipe for warmer balmy nights when you’re craving something light yet satisfying.

This Mediterranean-inspired dish pairs the delicate flavour of cod with vibrant vegetables. It’s served with our semi-homemade aioli featuring TRUFF Mayonnaise. The zesty, umami-rich flavour of the aioli perfectly complements the base of this meal.

Pair this dish with couscous or saffron rice for a hearty, delicious meal.


Instructions:
  1. Heat olive oil in a frying pan.
  2. Add garlic, onion, and capsicum, and sauté for three minutes.
  3. Add diced tomatoes, olives, and saffron, stir to combine, and bring to a simmer.
  4. Simmer for five minutes, stirring occasionally. Add the cod fillets to the pan.
  5. Reduce heat, cover, and cook for 8–12 minutes or until the fish is cooked through. Season with salt and pepper.
  6. To make the aioli: Place TRUFF Mayonnaise, garlic, lemon juice, and lemon zest in a medium bowl, and whisk to combine. Drizzle the aioli over the cooked fish and veggies when ready to serve.
