The perfect recipe for warmer balmy nights when you’re craving something light yet satisfying.
This Mediterranean-inspired dish pairs the delicate flavour of cod with vibrant vegetables. It’s served with our semi-homemade aioli featuring TRUFF Mayonnaise. The zesty, umami-rich flavour of the aioli perfectly complements the base of this meal.
Pair this dish with couscous or saffron rice for a hearty, delicious meal.
Instructions:
- Heat olive oil in a frying pan.
- Add garlic, onion, and capsicum, and sauté for three minutes.
- Add diced tomatoes, olives, and saffron, stir to combine, and bring to a simmer.
- Simmer for five minutes, stirring occasionally. Add the cod fillets to the pan.
- Reduce heat, cover, and cook for 8–12 minutes or until the fish is cooked through. Season with salt and pepper.
- To make the aioli: Place TRUFF Mayonnaise, garlic, lemon juice, and lemon zest in a medium bowl, and whisk to combine. Drizzle the aioli over the cooked fish and veggies when ready to serve.
